This Pesach’s Most asked for Recipe!

So I never completed posting my how to make Pesach less stressful menu - Pesach prep took over and I had no time to write. My apologies. I will try to post the remaining menu before chag is over.

This year without a doubt the most requested recipe that has been asked for is my Pesach Biscotti recipe. It is simple, gluten free and absolutely delicious. So here goes!

Pesach Biscotti

Ingredients:

1 cup sugar

¼ cup oil of your choice

2 eggs

3 ½ cups almond flour

1 cup chopped nuts of your choice

(you could also add chocolate chips, dried fruits or really anything you like in a cookie depending on your minhag)

Step-By-Step Directions:

  1. Preheat oven to 350 degrees F.

  2. Line a sheet pan with parchment paper.

  3. In a large bowl combine sugar, oil, and eggs and blend with a mixer until fluffy.

  4. Add dry ingredients to wet and stir until combined. Fold in slivered almonds, chopped pecans and optional chips or craisins.

  5. Transfer dough to a parchment lined baking sheet and form into 2 logs about 12 inches long and 3 inches wide. Bake 30 Minutes.

  6. Remove from oven and cool for 20 Minutes.

  7. Transfer log to a cutting board and cut into 1/2 inch slices on the diagonal.

  8. Return the biscotti to the oven for another 15 Minutes or until golden brown.
